Greetings from the vibrant land of Korea, where I recently had the pleasure of immersing myself in an evening of culinary delights, art, and cultural exploration. It was an exhilarating and inspiring experience that left a lasting impression on me.
One of the highlights of the evening was indulging in some of Korea’s most renowned dishes, including the infamous kimchi. Let me tell you, the kimchi pancake was an absolute delight, bursting with flavor and a perfect representation of Korea’s rich culinary heritage. However, the fried ginseng was a bit of a surprise – its medicinal taste was unexpected, yet I couldn’t deny the health benefits it offered. It’s funny how some of the healthiest foods often lack the mouthwatering appeal, but as someone from the Caribbean, I can certainly relate.
As a self-proclaimed foodie, sampling the diverse array of dishes was a true delight for me. But beyond the culinary experience, it was a chance to immerse myself in Korean culture – to embrace their food practices, traditions, and artistic expressions. It’s these encounters that provide a deeper understanding of a country’s identity and leave a lasting impression on your soul.
The evening also sparked a reflection on the relationship between food and wellness. It’s remarkable how what we eat directly impacts our energy levels, mental clarity, and overall well-being. As I strive for a healthier lifestyle, inspired by the radiant glow of Korean ladies, I’m reminded of the importance of nourishing both body and mind with the right foods.

Mike’s passion for Korean culture has always intrigued me, and now, after experiencing it firsthand, I can truly appreciate its beauty and allure. It was my first real immersion into Korean culture, and I must say, I’m thoroughly inspired and intrigued.
Meeting Kimchi grand master, Ha Yeon Lee, was a highlight of the evening. Her live demonstration was not just a showcase of culinary skill but a testament to her entrepreneurial spirit and drive to make a difference in the world. Her inspiring story of resilience and determination left a lasting impression on me, reinforcing the belief that passion and perseverance are key ingredients for success.
Kimchi, often dubbed Korea’s soul food, has garnered international acclaim for its health benefits and unique flavor profile. With its potential for global appeal, it’s no wonder that efforts are underway to introduce kimchi to palates around the world. From Hillary Clinton’s endorsement to its versatility in pairing with various cuisines, kimchi’s journey to global recognition is well underway.
As I continue to explore the fascinating world of kimchi, I can’t help but envision its potential for pairing with wines, sake, and Caribbean delicacies. The possibilities are endless, and I, for one, am excited to see where this culinary journey takes us.

Daero Choi:
Another entrepreneur that I met was Daero Choi who owns a family desserts business in Seoul. With an array of rice treats awaiting us on our seats, it was another moment of being reminded that Korea’s famous identity of rice is filtering through very innovative dessert ideas.
Rice Production
The rice production in South Korea is very important for the food supply in the country, with rice being a common part of the Korean diet. It’s no wonder they have innovated rice across the whole of the food and beverage category from drinks, food, and dessert dishes.
I tried a delicious 6% alcoholic rice with peach drink which was very refreshing and flavorsome that accompanied my meal. To me, it tasted like a beautiful fruit drink, but be warned, the hidden 6% alcohol is still there.
